Gums
Gum is useful as a natural fiber that comes from the Acacia tree and can also be used as a substitute for flour and fat in food recipes to help reduce the calorie content of food without reducing the texture or thickness of food. Gum contains at least 1 calorie per gram, compared to flour’s 4 calories per gram and fat’s 9 calories per gram. Because of these small calories, gum is also used for health purposes such as diet programs for lowering cholesterol levels; research has concluded that consuming 12–15 grams of gum per day can reduce LDL cholesterol levels.
